Instructions
Make a strip of cucumber using a vegetable peeler and stick it around the side of your highball glass. Fill the glass with ice.
Add the gin, lime juice, sage simple syrup and cucumber water to a cocktail shaker.
Add ice and shake until chilled.
Strain into the highball glass and serve immediately.

, or you can substitute with plain simple syrup.
You can make cucumber water by slicing up a cucumber and letting it sit in a pitcher of water overnight. Then scoop out the cucumber in the morning.
