Dragon Fruit Mojito
A simple and delicious mojito, with dragon fruit adding beautiful color, texture and sweetness.

Ingredients
1-2
slices
fresh dragon fruit
reserve 1 round slice for garnish
2
ounces
white rum
1
ounce
simple syrup
1
ounce
lime juice
2
sprigs
fresh mint
3-4
ounces
seltzer
Instructions
Muddle the dragon fruit slices in the bottom of your highball glass. Leave the pink skin on while you muddle to add color to the drink.
1-2 slices fresh dragon fruit
Using a bar spoon, remove the pink skins, leaving the flesh and seeds in the glass.
Add the rum, simple syrup and lime juice to the glass.
2 ounces white rum,
1 ounce simple syrup,
1 ounce lime juice
Slap the mint between your palms a couple times to release the aroma, and add it to your drink.
2 sprigs fresh mint
Fill the glass with ice and top with seltzer. Give the drink a stir or two with a bar spoon.
3-4 ounces seltzer
Cut a slit in the dragon fruit slice you've reserved for garnish, and place it on the rim of the glass.

Notes
You can lighten up the calories and sugar by substituting the simple syrup with allulose syrup or another sugar substitute.
