Add the gin, lemon juice, simple syrup and bitters to a cocktail shaker.
2 oz Earl Grey Gin, 1 oz lemon juice, 1 oz simple syrup, 3 dashes lavender bitters
Fill the shaker with ice, and shake 15-20 times to chill and dilute the cocktail.
Strain the cocktail into your cocktail glass.
Using your paring knife, cut a large piece of lemon peel. Twist the peel over top of the cocktail and place it in the cocktail for garnish.

If you can't get your hands on Corgi's Earl Grey Gin, you can infuse your own. Just add some ginto a clean mason jar and add a few bags of Earl Grey tea. Make sure the gin is covering the tea bags. Leave it for at least an hour, or overnight (the longer you leave it, the stronger it will be). Then just take out the tea bags and use your infused gin!
If you're making your own simple syrup, you can infuse that as well by adding tea bags when it begins to boil.
You can make your own simple syrup with allulose instead of sugar for a low-sugar option.
