Instructions
Watermelon Prep
Cut up your watermelon into chunks, roughly around 1 inch cubes.
Line your baking dish with waxed or parchment paper, and lay the watermelon pieces on the paper.
Freeze the watermelon for at least 2 hours.
If you want to freeze it longer, you can transfer it to an airtight container after 2 hours, and just use it as you need.
Cocktail
Wet the rim of your cocktail glass either using water or a cut lime.
Dip the rim of the glass into a small dish of fine grained salt, so the salt sticks to the rim. Set the glass aside while you make the drink.
Add the tequila, lime juice, Cointreau and syrup to a blender.
Add in the frozen watermelon.
Pulse the blender until the chunks are broken up, and then blend until smooth.
Pour the blended drink into your prepared cocktail glass.
Optionally, add the lime to the rim of the glass and rest the watermelon slice next to the lime. Serve and enjoy!
