Prepare your serving glass by adding an optional lime sugar rim. Start out by mixing the lime zest and sugar in a small dish, and rub them together between your fingers.
Wet the rim and side of your glass using either water or a cut lime.
Dip the wet part of the glass into the lime sugar, until it is all coated.
Add your lychee to a cocktail pick and set it aside, along with your mint sprig, to add to the drink at the end.
Drink
Clap the mint leaves between your hands and add them to your cocktail glass.
Add in the lime juice, lychee puree and lychee syrup.
Fill the glass with ice and add in the lychee sparkling water.
Use a long bar spoon to gently stir the drink, just until everything is mixed in.
Clap the mint sprig between your hands and add it to the top of the drink along with the lychee on a cocktail pick. Enjoy!
Notes
For the lychee puree, I used a store bought puree that has sugar added into it already. If you want to make your own puree using only lychees, you will need to add extra lychee syrup from the can. Or, you can add an ounce of simple syrup along with the puree.
