The Lavender Lime Spritz is a simple and delicious mix of gin and floral flavors, perfect for spring and summer evenings or whenever you need a light and refreshing sip! This is a really easy drink to make, and the lime and lavender go together perfectly.
I used Empress Gin, which brings a lovely pinkish purple color to the drink (and a delicious flavor, too). This drink is super refreshing and the floral and citrus flavors make it a great choice for a spring or summer drink.

Homemade Lavender Syrup
While you can certainly use store bought lavender syrup in this drink, I love making my own homemade syrup!

To make the syrup, combine a cup of sugar and a cup of water in a small saucepan. Bring to a boil, then reduce it to a simmer for a few minutes.
Take it off the heat, then add some dried lavender buds, and let it all steep together while the syrup cools to room temperature. Strain out the buds. You can store it in the fridge for a few weeks.
This is such a great syrup to have on hand for spring or summertime!
Ingredients
Here's what you'll need to have on hand for this drink:
- Empress Gin - I used Empress 1908 Gin because I love both the color and the juniper-forward flavor! You can use your own favorite gin.
- Lavender syrup - I made homemade syrup, but store bought is great too.
- Lime juice - freshly squeezed if possible!
- Lavender bitters
- Lime seltzer
For the garnish, you can use a slice of a fresh lime and some lavender sprigs. I used lavender I had dried myself, but you can find some culinary lavender on Etsy.
Substitutions
Don't have one of the ingredients? Try one of these substitutes:
- Gin - You can use vodka or tequila blanco in place of the gin. If you don't have Empress but you want the pinkish purple color, you can add some dried butterfly pea flowers either to the gin beforehand, or directly to the cocktail.
- Lavender syrup - you can use regular simple syrup and some extra lavender bitters if you still want the lavender flavor. Or, try a tiny bit of lavender extract.
- Lime seltzer - you can just use plain seltzer. If you want the drink to be sweeter, try using a lemon-lime soda instead.
- Lime - if you don't have lime, lemon juice also works great in this drink.
Variations
Here are some other ways to enjoy this drink:
- Keto Friendly - it's easy to make this into a keto-friendly drink. If you're making lavender syrup, you can just use allulose instead of sugar! Or, you can use a store bought sugar free syrup, like Blueberry Lavender syrup by Jordan's Skinny Syrups.
- Virgin - to make a non-alcoholic version, omit the gin and use an alcohol free substitute, like Monday Gin.
- Different garnish - try using a lime twist as a garnish. You can also add some sparkle to the drink with some clear Brew Glitter!
Equipment
This is a really easy cocktail to make, since you just mix it in the glass! The most important bar tool to have on hand is a jigger to measure the ingredients.
For the glass, I used a stemmed gin and tonic glass, but any large wine glass will work great.
If you're using a fresh lime, you'll want to have a cutting board and knife, as well as a citrus juicer.
You also may want to have a bar spoon to stir the drink, or serve it with a straw or drink stirrer.

Instructions
Start out by preparing your garnishes if you're using them. I used a lime slice, plus a couple of dried lavender sprigs. (Make sure you are using culinary lavender! You can usually find whole lavender sprigs on Etsy.)
Then, fill your serving glass with ice.
Add in the lime juice and the lavender syrup.
Add in the gin, and then the dashes of bitters.
Add in your seltzer, and then optionally attach your lime slice to the rim of the glass.
Add in the lavender sprigs if you're using them, and serve!
If you don't want to have a pink layer at the bottom, you can gently stir the drink before serving.
Hint: If you refrigerate all of your ingredients for about 30 minutes before making the drink, it will stay colder and the ice will melt more slowly. You can also refrigerate the glass!
Top tip - Making a batch for a party
You can easily make a large batch of these drinks! Since they're served over ice, you can just mix together the lime juice, lavender syrup and gin in a pitcher.
You can multiply the amounts of each ingredient by the number of drinks you think you'll need to serve up. (Or just use the calculator in the recipe card below.)
To make each drink, just pour out 3¼ ounces of the premade mix into an ice-filled serving glass, and top with fresh seltzer. Easy peasy!

Lavender Lime Gin Spritz
Equipment
- Cocktail serving glass (Spritz style) (a large wine glass works great)
- Knife and cutting board (if using fresh lime)
- Citrus juicer (if using fresh lime)
Ingredients
Cocktail
- ¾ ounces lime juice
- 1 ounce lavender syrup
- 1½ ounce gin (I used Empress gin, which gives a purple color)
- 2 dashes lavender bitters
- 4 ounces lime seltzer (or plain seltzer)
Garnish (optional)
- 1 lime slice
- 2 sprigs dried or fresh lavender
Instructions
- Add ice to your cocktail glass.
- Add the lime juice, lavender syrup, gin and lavender bitters to the glass.
- Add in the seltzer. If you want, give everything a gentle stir, or serve it with a separate layer of color at the bottom.
- Attach the lime slice to the rim of the glass, and add in the lavender sprigs.
- Serve and enjoy!
