    Honey Syrup

    Honey Syrup is such a great cocktail ingredient to have on hand in your fridge! I love making this for spring and summer cocktails. It has all of the flavor of honey, but it's not as thick. So, it's perfect for mixing in your cold cocktails and mocktails!

    You can use this honey syrup in place of regular simple syrup in any cocktail. But there are a few drinks created with the honey syrup in mind! Try out the Gold Rush whiskey cocktail, or the Bees Knees gin cocktail.

    Honey syrup also goes really well with different flavors! You can use the same techniques in my Sage Syrup or Lavender Syrup recipes, and just use honey instead of white sugar for a delicious mix of syrup flavors.

    Ingredients

    There are only two ingredients in this syrup: water and honey!

    Make sure you're using a filtered or bottled water for the best taste.

    For the honey, I definitely recommend a honey that's local to you if possible. Clover honey works great in this recipe.

    Typically a darker colored honey will have a deeper flavor. Clover honey is a mild honey, while buckwheat honey is a lot darker and more complex. Pick your favorite and go for it!

    Variations

    Want to make a different type of syrup with honey? Try using a brewed tea instead of plain water.

    You can use any kind of tea, from black tea to herbal tea! Try using honey instead of sugar in this Earl Grey Syrup for even more flavor.

    If you want to try a spicy version, try getting a hot honey like Mike's Hot Honey to use in this recipe!

    Equipment

    To make the syrup, you'll need a small saucepan and a measuring cup or kitchen scale.

    You'll also need a spoon, a funnel, and a resealable storage container. (These 8 ounce swing-top bottles would work great.)

    Instructions

    Start out by combining the water and honey in a saucepan.

    Place the saucepan over medium heat, and stir until the mixture is hot and all of the honey is dissolved.

    Let the mixture cool to room temperature, and then put the syrup in your storage container or bottle.

    Hint: If you don't have a saucepan, you can heat the water in a kettle instead. Mix it into the honey in a separate mug or bowl until the honey dissolves.

    Top tip

    To help the syrup cool down faster, you can place the bottom of the saucepan in an ice bath (mixture of ice and water).

    Stir the syrup as it sits in the ice bath, and it should cool down in just a few minutes. Just be careful not to let any of the ice bath water into the syrup!

    Ingredients

    • 4 fluid ounces water (½ cup)
    • 4 fluid ounces honey (½ cup - 6 ounces by weight)

    Instructions
     

    • Add the water and honey to a small saucepan.
    • Place the saucepan over medium heat.
    • Stir as the liquid heats up, just until the honey is fully dissolved.
    • Take the syrup off of the heat and let it cool to room temperature. (If you want it to cool faster, you can put the bottom of the saucepan in an ice bath.)
    • Pour the syrup into a storage bottle and seal it up. You can use it right away, or keep it in the fridge for up to a month.

    Notes

    • If you don't have a saucepan, you can heat the water in a kettle until it boils. Then mix it into the honey in a separate mug or saucepan until the honey dissolves.
